Forget jacket potato and cheese. Try baked sweet potato and a large dollop of humous and a drizzle of sriracha.

This. is a great quick and simple supper – one potato per person

Pre heat the oven to 200C.

Prep the sweet potato by a quick rinse and removing any odd bits and then place them on a metal tray and place in the oven for 40 mins or until you can put a knife into them and find no resistance.

Take them out of the oven and slice from top to bottom and place on each plate.

Spread 2 or more tablespoons of humous on each half, drizzle with hot chilli sauce (sriracha) and serve with a green salad.
