Very simple side salad of shredded cooked beetroot, shredded eating apples and shredded basil mixed and finished with a balsamic glaze and a handful of pine nuts.

using a cheese grater, grate 3 large beetroots into a bowl. squeeze the grated beetroot to remove the liquid, pour the liquid away.

Now do the same with 2 large eating apples, grate them into a bowl and squeeze away the excess liquid. Add the apple to the beetroot and gently mix together.

Take at least 6-8 leaves of fresh basil and roll them tightly together and finely slice the leaves. add the chopped leaves to the beetroot and salad. mix gently.

To finish, drizzle over a balsamic glaze and scatter over toasted pine nuts. serve immediately

  • 300 g cooked beetroot – 3 large beetroot
  • 3 eating apples
  • 12 g basil leaves
  • 20 g toasted pine nuts
  • 2 tsp balsamic glaze

Method

  • Using a cheese grater, grate 3 large cooked beetroots into a bowl. Now squeeze the grated beetroot to remove the liquid, and pour the liquid away.
  • Now do the same with 2 large eating apples, grate them into a bowl and squeeze away the excess liquid. Add the apple to the beetroot.
  • Take at least 6-8 leaves of fresh basil and roll them tightly together and finely slice the leaves. add the chopped leaves to the beetroot and apple. Mix gently.
  • To finish, drizzle balsamic glaze over the salad and scatter toasted pine nuts
  • Serve immediately

Notes

The salad is best made just before serving as the salad will not keep as there are no fats or oils added
