Black Bean & Mushroom Fajitas

These fajitas have 3 fillings, a shredded black bean chilli mix, fried mushroom and pepper fajita mix and a green salad.

drain and rinse 2 cans of black beans put them into a blender with chilli spices and blitz until a chunky consistency.

put the beans into a bowl and add a can of chopped tomatoes and stir. now simply heat in a pan and it’s ready to serve. Keep warm. stir occasionally to stop it sticking to the pan.

Next, slice the mushrooms and peppers and fry in a wok with added fajita spices. stir and cook until the peppers are charred and the mushrooms have taken on colour and just starting to release their juices.

Put the wraps in an oven to warm through.

Make a green salad with lettuce and avocado and dress with fresh lime juice.

Serve all the dishes onto a table and let guests make their own fajitas

Ingredients

  • 2 cans black beans drained and rinsed
  • 4 large field mushrooms
  • 4 Red Peppers
  • 1 onion
  • 1 packet of wraps
  • 2 avocados
  • 2 bag of salad
  • 2 fresh limes
  • 1 tbsp fajita spice mix (or a mix of cumin, paprika, chilli powder)
  • 1 bunch of fresh coriander
  • 1 tbsp olive
