Coronation tofu and watercress sandwich

This sandwich is a great use of extra firm tofu. Toasted in a cornflour and curry powder mix and served in a dressing made of a plant based greek yoghurt, curry powder and a dollup of mango chutney on a bed of watercress.

Begin by draining and drying the tofu, then breaking it up into small chunks for a sandwich.

mix a tablespoon of curry powder and cornflour into a mixing bowl and add the tofu, mix to cover the tufo in the cornflower and curry powder.

Fry the tofu in a little oil until brown and crispy on all sides. Take off the heat and allow to cool.

While the tofu is cooling make the coronation dressing.

Put 2 tablespoons of plant based yoghurt into a mixing bowl with a tablespoon of curry powder and a tablespoon of mango chutney and mix together. Taste and adjust to your preference.

When the tofu has cooled mix with a tablespoon of flaked almonds with the coronation dressing.

Cut four slices of bread.

Make two sandwiches with a layer of the coronation mix, then a layer of watercress.

Cut them in half and serve immediately.
