This is a crunchy seedy salad with a refreshing lemon and coriander dressing.

The use of a spiralizer (instead of using a grater) creates a more of a crunch for the courgette and the carrot. If the courgettes and carrots aren’t big enough then use a julienne peeler rather than a grater.

Toast the pumpkin seeds in a dry pan, just to brown them. Remove from the heat to cool.

Spiralize the 2 courgettes and the 2 carrots. if the spirals are too long cut them into short lengths (its not a noodle salad ?)

Add the cut spirals of courgette and carrot into a salad bowl.

Put in the poppy seeds and the toasted pumpkin seeds.

Add the chopped coriander.

Pour over the Olive oil and the juice of lemon.

Mix throughly and serve.

  • 2 Courgettes
  • 2 Carrots

  • 4 tbsp pumpkin seeds
  • 1 fresh Lemon
  • 2 tbsp olive oil
  • 2 tbsp chopped coriander
