Courgette, pea, radish and pecan rocket salad with lemon dressing

Using what I have in my cupboards, this is a fresh tasting salad with spiralised courgette, thinly sliced radish, chopped pecans, garden peas with a handful of rocket leaves in a lemon and olive oil dressing

Put a handful of rocket into a salad bowl

Add the garden peas to the salad bowl (I used defrosted frozen peas)

Spiralise the courgette and place in the salad bowl

Thinly slice the radish, I used a mandolin, just watch your fingers. Add the sliced radish to the salad bowl

Roughly chop the pecans, add them to the salad bowl.

Mix together the ingredients in the bowl

squeeze over the juice of a lemon and a tablespoon of extra virgin olive oil over the salad, mix until all the ingredients are coated. Taste and adjust the seasoning (maybe more olive oil? or more lemon?)

  • 30 gm rocket leaves
  • 100 gm garden peas
  • 150 gm pecans
  • 150 gm red radish
  • 1 courgette
  • 1 lemon
  • 1 tbsp olive oil

Method

  • Put a handful of rocket into a salad bowl
  • Add the garden peas to the salad bowl (I used defrosted frozen peas)
  • Spiralise the courgette and place in the salad bowl
  • Thinly slice the radish, I used a mandolin, just watch your fingers. Add the sliced radish to the salad bowl
  • Roughly chop the pecans, add them to the salad bowl.
  • Mix together the ingredients in the bowl
  • Squeeze over the juice of a lemon and a tablespoon of extra virgin olive oil over the salad, mix until all the ingredients are coated. Taste and adjust the seasoning (maybe more olive oil? or more lemon?)
