For each person slice the sourdough and begin toasting it.

Cut the avocado in half for each person and remove the stone, use a spoon to take out the flesh and slice.

Put the sliced avocado on the toast and spread houmous over the top

Serve with a mixed salad – this salad had lettuce, chilli beetroot, spring onions, tomatoes and sweetcorn in a vinaigrette dressing.
