Jamaican Jerk Tofu with peppers and onions

This is extra firm tofu, cut into cubes and rubbed with a Jamaican Jerk spice rub. Then fried until crispy all over and served with red pepper and onions on a bed of rice.

Place the rice on to cook.

Begin by patting the tofu dry and then cubing. place the cubes into a mixing bowl and covere in the jerk seasoning. put to one side.

chop the red pepper and onion into the same size as the tofu cubes. Now fry these gently in a little oil to soften and charr them. Once they are charred and softened, remove them from the pan ready to add back in when the tofu is cooked.

Now put the tofu into the pan with a little more oil and cook until crispy all over. Now add back in the pepper and onion and mix. Continue to cook for a few minutes and then turn the pan down to low.

Drain the rice when its cooked.

Chop some tomatoes into small pieces to serve with the rice.

Chop some coriander and sprinkle over the tofu mix and stir in.

Now assemble the dish – in each bowl place a portion of rice, a couple of spoons of tomatoes and a portion of the tofu and pepper mix.

Optionally cover with sriracha
