These are super spicy (not super hot) noodles mixed with garlic, spring onions and Gochugaru powder (korean chilli flakes) and served with a sprinkle of toasted sesame seeds.
Gochugaru powder is a deep red chilli powder without the seeds, so its spicy but not as hot as expected
It is best to get everything ready and vchopped before starting.
Finely slice the garlic into one bowl
and slice the spring onions into another bowl
Once the noodles are cooked you should be ready to make the dish.
Cook the noodles, according to the packet, I used flat wheat noodles but any flat noodle will do and once cooked, refresh them in cold water to stop the cooking.
Put them in a sieve to drain.
In a wok or large frying pan put some vegetable oil and gently (medium heat) fry the finely chopped garlic and Gochugaru powder (korean chilli flakes) for a three minutes.
Then add the noodles and stir and mix in the spices and cook for 1 minute over low to medium heat.
Stir in another tablespoon of dark soy.
Add the finely sliced spring onions and stir and cook for three more minutes.
Drizzle with a little toasted sesame oil, stir and place into bowl and sprinkle with sesame seeds and fresh chilli and serve immediately
