Leek and Potato soup

Boil a kettle of water for later on.

Finely chop the leeks and onions and add them to a large saucepan and sauté in a little oil to colour and gain a some flavour.

Chop the potatoes into small chunks and add to the leeks.

Add a tablespoon of stock and pour in the boiling water.

Simmer until the potatoes are tender.

Meanwhile, finely slice the spring onions and fresh chillis.

Using a hand blender to blender the potatoes and leeks into a smooth soup.

Serve the soup in bowls and garnish with the spring onions and fresh chilli.
