Mango, spring onion, chilli salsa

Mango and chilli salsa – it’s sweet, it’s fiery, it’s fresh tasting and it’s so easy to make and goes really well with tacos.

Finely chop a red bell pepper, spring onions, red chilli and add to the bowl. I sometimes use a green chilli and a yellow pepper)

Cut the mango in half and cut out the stone. Remove the skin and finely chop the mango into small pieces and add to the bowl.

Finely, chop the coriander and add to the dish, squeeze the juice of 1 lime over the contents of the bowl, a sprinkle of sea salt and mix thoroughly.

Serve with the tofu or walnut tacos.

  • 30 g coriander a bunch
  • 4 spring onions
  • 2 tsp sea salt flakes

Method

  • sprinkle sea salt flakes over and mix.
  • Serve with the tofu or walnut filling and warm tortillas
