This a twist on boiled or roasted potatoes. I noticed a few years ago Jamie Oliver smashed his roast potatoes half way through cooking.
This version I boil the potatoes until cooked (soft enough to be able to stick skewer in). Then lay them out on a metal baking tray, then smash them flat with the base of a mug, drizzle oil and seasoning over them and roast them in a hot oven until all the smashed edges are crispy.
