Sikil pak (pumpkin seed dip)

Sikil pak is a Mayan inspired dip, protein packed and so easy to make. just pumpkin seeds, spring onions, fresh tomatoes, chilli, garlic, coriander and lime juice blitzed into a dip.

Great as a side dish for a Mexican meal or as a dip with with veggie batons or tortilla chips.

Using a high powered blender put all the ingredients (pumpkin seeds, chopped spring onions, chopped fresh tomatoes, chopped chilli, chopped garlic, coriander and lime juice blitzed into a dip. into the blender and blend until smooth, you may need to add a tablespoon of water if it is too stiff.

scrape out and put into a bowl. Refrigerate until ready

serve with tortilla chips or use as a side dish like guacamole.
