Sweet potato fries

Sweet potatoes, peeled, then cut into chip shapes.

In a large bowl put several tablespoons of cornflour with a tablespoon of paprika and mix. Now put the chips into the bowl and coat them in the cornflour. Dust them down and arrange in a single layer on to metal roasting trays

Put the chips onto a metal tray with a drizzle of olive oil and bake in an preheated oven at 180C until golden brown for about 30mins.

I found that they took longer than normal potatoes to crisp up and any small pieces will burn, but keep cooking them until you see the smaller chips burn ?

Ingredients

  • 6 sweet potatoes
  • 4 tbsp cornflour
  • 2 tbsp paprika

Method

  • Take the sweet potatoes and peel them, then cut into chip shapes.
  • In a large bowl put several tablespoons of cornflour with a tablespoon of paprika and mix. Now put the chips into the bowl and coat them in the cornflour. Dust them down and arrange in a single layer on to metal roasting trays.
  • Put the chips onto a metal tray with a drizzle over olive oil and bake in a preheated oven at 180C until golden brown for about 30mins.
  • Keep checking, I found that they took longer than normal potatoes to crisp up and any small pieces will burn, but keep cooking them until you see the smaller chips burn and then the majority will just right. They go from crisp to burnt quite quickly ?

Notes

when cooking the chips keep checking, the first 20 mins they just seem to get warm, but eventually they crisp but at that point they can suddenly go from crisp to burnt.
