Press the tofu for 30 mins. Pat dry and then crumble (pull the block apart with your own hands) into bite size chunks and toss the pieces in a curry powder of your choice ( I use a madras powder) and a little vegetable oil
Next, toast the tofu chunks on a metal roasting tray for 30 mins. in a preheated medium oven.
While the tofu is toasting in the oven, slice the red peppers and onions and fry them in a 1 table spoon of oil. add a tablespoon of Tikka Masala spice paste (I use Patak’s) and fry for a few minutes.
Next add a tin of chopped tomatoes and stir throughly and cook gently for several minutes.
Take the tofu out of the oven and put into the tomato mix and stir and simmer for a few minutes. switch off the heat and let it rest for 2 mins.
Garnish with fresh coriander and serve with pilau rice
