These black bean Koftas are aromatic and are delicious served with tzatziki on a warm flatbread with a salad

Begin by finely chopping the onions, mushrooms and sun dried tomatoes and sauté them in a little oil until reduced.

add finely chopped garlic and the spices and stir and cook for another minute.

drain and rinse the black beans and blend for until chopped up. Pour them into the onions and mushrooms and mix thoroughly.

Allow to cool.

Form the cool mixture into kofta shapes (sausage shape) and dust them with cornflour (this will give a crispy shell when cooked)

I then sprayed them with oil and used a panini grill, but you can either shallow fry or bake in the oven.

While they are cooking make the tzatziki by finely chopping the cucumber and mint leaves and mixing with a plant based mayonnaise.

Warm the flatbreads.

When the koftas are ready, put a warm flatbread on a plate and lay two koftas on top, serve with the tzatziki and a green salad.

  • 30 g Brown Mushrooms
  • 2 onions
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 2 clove garlic
  • 10 g fresh mint
  • 20 g sun dried tomatoes
