Bright pink red onion pickle

These bright pink red onion pickles are a Mexican recipe and used on tacos, in burritos and actually are ideal with any spicy or creamy food to add that bit of sharpness. And the colour is so pink!

Makes a plate look marvelous

Just three ingredients – Red onions, salt and lime juice. The secret to the bright pink colour is the sliced onions are soaked for 20 mins in very hot water and then left overnight in the fridge in the lime juice.

Begin by removing the skin off the red onions and slicing them. Place them in a bowl.

Cover with near boiling water and let them sit for 20 mins.

After 20 mins drain the onions and place back in the bowl.

Add 2 teaspoons of sea salt and the juice of 5 limes – depending on how many red onions, there should be enough lime juice to cover the onions.

Mix the red onions, salt and lime juice well and place in a container so the red onions are completely covered and store in the fridge overnight.

The next day the red onion pickle is ready to use on your favourite dish.

Lasts up to 10 days in the fridge
