Ingredients

  • 250 gm cooked puy lentils – 1 pouch of cooked lentils
  • 200 gm cooked edamame beans – from frozen and cooked for 2 mins
  • 1 red onion
  • 30 gm fresh coriander
  • 100 gm cucumber – half a cucumber
  • 1 red chilli

Dressing

  • 1 tbsp miso paste
  • 3 tbsp rice wine
  • 1 tbsp soy sauce
  • 2 limes

Method

  • Put the cooked puy lentils and edamame beans into a serving dish
  • Finely chop the red onion and add to the salad
  • Finely chop the cucumber and add to the salad
  • Finely chop the fresh red chilli and add to the salad
  • Finely chop the coriander and add to the salad
