this is a tasty easy supper meal – garlicky mushrooms on avocado mash on toast
thickly slice the mushrooms and lay them flat on a medium hot frying pan and drizzle with olive oil. once they are coloured, turn them over and cook until both sides have a colour.
Turn the pan down to low/medium and add the crushed garlic and chopped parsley to the pan and shake and allow to gently heat through. Turn off and put to one side.
Toast the 4 slices of bread.
While the bread is toasting, open the avocados and scoop out the flesh into a bowl and mash. Optionally, season with salt and pepper.
No assemble the supper
Place a portion of the dressed salad to each plate.
Spread the avocado mash over the toasted bread, place on the plate with salad and add the mushrooms on top of the avocado toast.
serve immediately.
