Vegetable rice with a bit of spice

This savoury rice uses ready cooked rice with any vegetables you have lying around, I used a red pepper, some mushrooms, onions, spring onions, sweetcorn and peas, together with some ground turmeric and rasa al hanout spice.

Finely chop the onions, red peppers, mushrooms and fry them in a little oil. Once they have reduced, add the spices and stir and cook for another 2 mins.

Add the rice, sweetcorn, peas and the finely chopped spring onions. Stir well and cook for 12 minutes in a medium heat, stirring occasionally.

finally, add the chopped coriander and squeeze over the juice of a lime and stir.
Adjust the seasoning.

Serve immediately.

Method
