Lembas bread

This is a plant based banana, almond and oatmeal bake, a cross between my banana and walnut bread and my Oat flapjack.

Named this after the bread in Lord of the rings.

The Fellowship of the Ring

Preheat the oven to 170C.

Put the sugars, pinch of salt and the vegan butter into a bowl and use a whisk to cream them together.

Mix in the banana and mash it all together with a fork.

Add the oatmeal, flour, tapioca flour, baking powder, cinnamon into the bowl and use a spoon to mix it all

Toast the almonds and stir them into the mix.

Line a 30x20cm baking tray with non stick baking paper.

Pour the mixture into the baking tray and flatten with a fork or spoon.

Place in a preheated oven (170C) for 30 mins, or ewhn the top has become golden brown and a toothpick can be insterted and removed clean from the bake. If its brown on top but not cooked in the middle cover the tray in foil and continue to cook until the toothpick comes away clean.

When cooked remove from the oven and while hot cut into flapjack slices.

Leave in the tray to cool for 30 mins where it will also set firm.

Remove from tray and place on a cooling rack until cold.

Put them in a storage tin and eat in the next 5 days.

Ingredients

  • 100 g vegan butter
  • 100 g white sugar
  • 50 g brown sugar
  • 200 g banana
  • 50 g flaked almonds
  • 120 g white plain flour
  • 150 g oat meal
  • 1 tsp tapioca flour
  • 0.5 tsp baking powder
  • 1 tsp cinnamon

Method
