Lentil and quinoa salad with tomatoes and a mint and parsley dressing

This is a high protein, fresh tasting salad using cooked puy lentils, cooked white quinoa, spring onions, tomatoes (optional grated carrot) dressed in a mint and parsley dressing.

Using ready cooked lentils and quinoa makes this a quick andeasy salad to prepare.

Put 250gm of cooked Puy Lentils onto the salad bowl

Put 250gm of cooked white quinoa into the bowl

Chop the parsley, mint, spring onions and tomatoes, add them to the bowl.

Optionally grate a carrot and add to the bowl.

Dress the salad with a classic vinaigrette
