A delicious side dish that takes 10 minutes to cook. Rainbow chard is great on the eyes and tastes great. Although part of the Beet family, its more like spinach in the way its cooked.

slice the mushrooms and finely chop the garlic. Place in frying pan or wok with a little water and allow to steam for 5 mins, tossing and turning every minute.

While the mushrooms are cooking chop up the rainbow chard into small chunks.

When the mushrooms have some colour add the chard to the pan and replace the lid and cook for a further 5 mins, tossing and turning every minute.

Add some pine nuts and keep cooking until the chard is wilted.

Serve immediately.

  • 200 g Rainbow Chard
  • 50 g mushrooms
  • 1 tbsp pine nuts
  • 1 clove garlic

Method

  • Slice the mushrooms and finely chop the garlic. Place in frying pan or wok with a little water with a lid and allow to steam for 5 mins, tossing and turning them every minute.
  • While the mushrooms are cooking chop up the rainbow chard into small chunks. Stalks and leaves.
  • When the mushrooms have some colour add the chard to the pan and replace the lid and cook for a further 5 mins, tossing and turning every minute.
  • Add some pine nuts and keep cooking until the chard is wilted.
  • Season to taste and serve immediately.
