This was meant to be an alternative to a BLT, but after trying several different seasonings from soy sauce, liquid smoke and bacon seasoning, the aubergine still tasted like roasted aubergine, which is actually great. By the time you fill the sandwich with lettuce, tomatoes, vegan mayo who needs the bacon?
Thinly slice the aubergine and place on a lined baking tray, brush with whatever seasoning you like, I choose bacon seasoning (which I couldn’t taste afterwards) and bak in the oven until brown and cooked.
Remove from the oven and allow to cool. Next make the sandwich with vegan mayo, shredded lettuce, slice tomatoes and cucumber topped with roasted aubergine.
