Use them as part of a sharing plate meal
I would prefer to use king oyster mushrooms but they are hard to find, so I have used portobello mushrooms.
Cut the mushrooms into squares and thread them onto skewers.
Place the skewers onto a baking tray and brush them with a teriyaki sauce and place in a hot oven for 15 mins, turning and reapplying the teriyaki sauce over the mushrooms during the 15mins.
Remove from the oven and scatter chopped parsley over them and serve immediately.
