Vegan Crispy Bacon

This is a quick recipe that makes vegan crispy bacon in about 20 mins from Vietnamese rice paper and spices. The texture has been compared to a cross between crispy bacon and pork scratchings. Probably not the best thing to remind vegans that those products are still sold. ?

Begin by putting the Oven on at 180 C to save time later.

Next, make the marinade. Mix in a large open bowl, a table spoon of olive oil, a tablespoon of maple syrup, a table spoon of Aminos (if you can’t find aminos use soy sauce), a tablespoon of paprika, a teaspoon of liquid smoke, a teaspoon of garlic powder.

Once mixed taste the marinade and adjust to your tastes. too much paprika can make it spicy hot.

Now prep, the roasting tray with a sheet of non stick baking paper, ready for the rice paper strips. Once the rice paper gets wet and coated it can be tricky to handle.

Take 2 sheets of rice paper (I managed to get square sheets) and dip them briefly into cold water, shake off the excess. Quickly take a pastry brush and coat one of the rice papers with the marinade and then place the other rice paper over this to sandwich in the marinade.

The 2 rice papers are now stuck together and damp they will be easier to cut. Working quickly, use scissors to cut the sheets into strips and dip each strip into the marinade coating both sides. place the strips onto the baking sheet and then place them into the preheated oven. Bake for 12 mins, then start checking every few to make sure they don’t burn. They should start to bubble.

However, slightly over cooked is better, You want them to char slightly.

Once cooked, take the bacon off the tray and place on a cooling rack to cool down and allow any steam to escape (helps them crisp up).

you can also use these as snacks and cut the strips into squares and eat them like crisps.
