Thai Curry Bean cake

This is lovely and spicy, I use either a jar of  red or green (vegan) thai curry paste 3 tins of beans – I love butter beans, kidney beans, boletti beans but any will do.

It’s basically, chopped and mashed  beans mixed with a Thai curry paste, coated in milled flax seeds and baked in the oven in metal rings.

Begin by draining and rinsing the beans and roughly chop and mash them together.

Then finely slice 2 onions and fry them until they start to slightly burn.  Mix in the chopped beans and the jar of curry paste and stir well.  Gently warm the mixture through and then turn off.

Put the 6 metal rings in a metal baking tin and sprinkle a layer of milled flax seeds over the base of all the rings.  Now fill will all the rings with the bean mixture patting it in nice and firmly.  Finally add a layer of milled flax seeds over the top of all the rings.

Put in a preheated oven at 180 for 25 mins.   Serve with  Charred baby Sweet corn  in a spicy peanut sauce and a tomato salsa.

  • 2 red onions
  • 3 limes
  • 1 bunch of coriander
  • 1 Jar of vegan green thai curry paste
  • 4 tbsp milled flaxseeds

Method

  • Begin by draining and rinsing the beans and roughly chop and mash them together.
  • Then finely slice 2 onions and fry them until they start to slightly burn.  Mix in the chopped beans and the jar of curry paste and stir well.  Gently warm the mixture through and then turn off

Notes

If you don’t have metal rings try using red peppers sliced from top to bottom and deseeded and use them to stuff with the spicy bean mixture.
